F.A DeRosa’s butcher shop personally selects and hand carves every cut of our Sinner’s beef. The cuts are typically aged for about 28 days, by industry standards, where the beef achieves that perfect aroma, flavor, & tenderness without reaching the point of diminishing returns, all awhile maintaining a high-quality product.

What makes the cuts prime?
It has that perfect balance of marbling and meat content. The dry-aging process increases the ratio of marble and meat, making the cuts exponentially better.

Every cut is aged inside a well-circulated, humidity & temperature controlled room, optimizing the aging process and maintaining high-quality standards.

1925

F.A. DeRosa, an Italian immigrant who dreamed of opening his own family business, purchased Liberty Food Market in Newark, N.J. F.A. gave birth to his son, F.M., who would soon carry on the DeRosa name through four generations of New Jersey butchers.

1946

F.M. DeRosa served his country proudly during WWII in the Army Air Force, before settling in Union County, N.J., where he continued the family trade working at the Westfield Market, a small butcher shop in Westfield, and then at Rose’s Market in Garwood..

1949

F.M. DeRosa worked with a local meat purveyor at the Plainfield Cold Storage Building and helped established Meat City, a retail and wholesale meat supplier in Linden, with a second location in North Brunswick..

1956

F.M. DeRosa became a sought-after name in the industry, and was offered the position of meat department manager at ShopRite in Dunellen, before being promoted to run the even larger meat department at the new ShopRite in Middlesex.

1969

F.M. DeRosa retired from ShopRite and decided to partner with his wife, Clementina, on their purchase of J&M Market in Mountainside, where F.M. would go on to teach his two sons the family trade. He instilled in them his knowledge of and passion for quality-cut prime beef, without compromise, and in 1986 sold the business to his sons.

1992

F.A. DeRosa, Sr., first son of F.M. DeRosa, spent nearly 25 years working for the family business at J&M Market. He then worked as a meat manager at Kings Supermarket in Berkeley Heights, and later as a supervisor at Village Supermarkets, where he spent 20 years overseeing eight ShopRite meat and seafood departments, until his retirement in 2017.

2018

F.A. DeRosa, Jr., who spent his childhood working as a clerk at his family’s J&M Market, went on to pursue a business career before realizing his true calling – to become a butcher and continue the family’s nearly 100-year history in the industry. With his father recently retired, it was the perfect opportunity for F.A. Jr. to learn from him everything he knew about beef – together, they then created their new business.

2021

F.A. DeRosa, Jr. and F.A. Sr. opened their own family-operated butcher shop in downtown Westfield, where they continue to build upon their heritage as fourth-generation butchers, specializing in only the finest corn-fed, hand selected USDA prime beef, dry aged to perfection. Here, quality dictates every cut they make. No poultry. No prepared foods. No bullshit. Just steak like you’ve never seen before.
